Chicken and Dumplings
6 to 8 skinless chicken thighs
3 tbsp olive oil
2 large onions coarse chopped
4 celery stalks cut into 2 inch pieces
4 carrots halved, cut into 2 inch pieces
2 cloves garlic smashed, chopped
1 tsp kosher salt
1 tsp fresh ground pepper
1/8 tsp nutmeg
? tsp thyme (fresh or dried)
? tsp rosemary or one small fresh sprig
2 whole bay leaves
6 cups low sodium chicken broth
1-cup whole milk or cream*
1 cup sliced fresh mushrooms
Chopped fresh chives for garnish
Heat olive oil in a Dutch oven or large pot, add onion, garlic celery, and carrots, to pot cook on medium until onions are transparent or soft
Season thighs with
salt and pepper add to pot and cook for 10 to 12
minutes turning half way through. Add broth and remaining seasonings to chicken and vegetables reduce heat to simmer cover and cook for 30 to 45 minute or until chicken starts to fall apart, once chicken is done remove chicken and vegetables from broth, this can be done with
a large slotted spoon and let cool slightly before removing meat from the bone, set aside prepare dumpling.

1/3 cup shortening
? cup chicken broth (cooled)
Stir dry ingredients together, cut shortening into dry ingredients until it resembles
A coarse meal stir in enough broth to make stiff dough, dust hands with
flour and knead dough 2 to 3 times or just enough to make sure everything is combined. Roll dough out until it is about ? inch thick. With a sharp knife or pizza
wheel cut dough into strips about 1 ? inches wide then cup strips into thirds placed on a baking sheet covered with
wax paper and chill in the frig for 15 to 20 minutes. Bring broth to a slow boil and add dumpling to liquid three to four at a time stir with
the opposite end of a wooden spoon to keep them from sticking together cook for 7 to 10 minutes. Reduce heat back to a simmer add chicken let heat for 5 minutes before adding milk or cream make sure liquid is not boiling when you add the milk to keep it from curdling reduce heat to low before adding mushroom, cook for another 5 minutes before serving.
Dumpling substitute: you can use 1 or 2 cans of Pillsbury buttermilk biscuits if you are looking to save a little time, cut biscuits into quarters and cook in liquid per instructions
Bisquik Dumplings: You can also use Bisquick mix, make biscuits according to directions on the box and cook in liquid as you would the scratch dumplings.
*You can also use a small can of cream of chicken soup in place of the
Milk, it makes the liquid a little richer and enhances the flavor.

1/2 tsp olive oil
3/4 cup water
1/2 tsp kosher salt
1 1/2 cup whole wheat flour
1/2 tsp sugar
2 1/4 tsp yeast
Place flour, yeast, salt and sugar in a mixer fitted with a dough hook. While mixer is running, gradually add water and knead on low speed until dough is firm and smooth, about ten minutes. Turn machine off. Pour oil down inside of bowl. Turn on low once more for 15 seconds to coat inside of bowl and all surfaces of dough with the oil. Cover bowl with plastic wrap. Let rise in warm spot until doubled in bulk, about two hours. Preheat oven (high, 500 degrees) with stone inside. Punch dough down, place on generously floured surface. Form into ball, stretch into circle, roll out. Flip onto more flour to make sure surface is mobile before topping. When topped, add to cornmeal-ed stone and cook 5-12
The yeast measurement is the size of 1 packet.
I have found that you get a good rise out of the dough if you proof the yeast first in warm water before adding to any other ingredients.
I have as much as tripled this batch!
You can get waaaaaay more than 8 slices out of this baby if you roll it out right.
You can also eliminate the sugar without much change in flavor, making it nearly core!
For Hawaiian Pizza: spray rolled out dough lightly w/olive oil Pam, ladle out some (preferably core-made) tomato sauce on top. You can use store-bought if you need to, of course. Sprinkle on 2 cups of ff Kraft Mozzarella, 1/2 can of drained pineapple chunks, 3 oz of diced Canadian Bacon. Bake!
