In contrast to original expectations, the addition of pear and peppers really lifted any potential heaviness of the oozing brie cheese (which was minimal). The mildly sweet flavours did justice to the lean game meat, which was cooked to medium well (a little too crumbly to hold up against the silky moist toppings). I wish I knew we could have requested the patties be cooked to medium rare. The jumbo shrimp? It was nicely grilled and added on just because we could. It was also consumed well before my first bite into the burger.
I'm also a sucker for sweet potato fries. These ones were coated with a thin shattering crust, crisp and addictive like chips.

My hospital visit is always well prepared, today I bought a Su Doku bokset for my mum to do when she's bored and a photography magazine for me to read (didn't learn much, just a bit of sharpening techniques and how selective sharpening is cool). Most of the time I was playing patapon 2 on the psp which is mucho fun and addictive.

Not much progress today since it's a sunday and most doctors are sleepy or relaxing. My mum started eating again and was able to eat the food I cooked her yesterday, kinda wish I knew that so I could cook some more for today. The hospital food was mucho blandular so very little of that was consumed.

While I was in California my favorite housewife made us butternut squash soup one night for dinner. It was amazing and the best part it was healthy. Now I just need to take these ingredients and make it. Rumor has it we are supposed to get a lot of snow tomorrow so if I am snowed in I will make it then.

1 butternut squash
2 leeks
2 pears (you can use canned if you cant find fresh)
2 large tomatoes
olive oil
chicken stock.

Roast squash (cubed), leeks (quartered) pears (quartered), tomatoes (quartered)
and 4 cloves of garlic. Drizzle with olive oil, salt and pepper. Roast at 425 for
40 mins until squash is soft.

Then just puree in a blender with 2-4 cups chicken stock depending on the
thinkness you want.



After such a heavy, fattening breakfast, it took me AGES to get hungry enough to eat dinner. Once I did get hungry, I decided it would be best to have something really light, and really healthy. I am a big fan of stir fry. My ex-roommate and friend bought this pan for me and I use it almost every single time I cook.

1 TB Olive Oil
1/4 C Ponzu
1 clove garlic
1/2 tsp Cinese Five Spice
1 Fresno pepper
1 bunch Bok Choy
1 C peas
1 pk sliced mushrooms
1/2 c chopped red onions
1 TB Red pepper flakes
3/4 C Broccoli Slaw
1 TB toasted pumpkin seeds
Salt to taste

Served over a bed of jasmine rice.

light and delish! Would have been better with a little soy sauce and some sugar snap peas. Next time... ;-)

Chef Michael Schlow Makes Deconstructed Corn Soup with Shrimp, Bacon, and Potato

James Beard Award winning chef, Michael Schlow, shows how easy it is to make a delicious soup in the Breville Die-Cast Hemisphere Blender.

Corn Soup with Shrimp, Bacon, and Potato

(Makes 4 portions)

For Soup:
? cup red onion, diced
3 oz Olive Oil
1 pint Fresh Corn, off the cob
? quart milk (whole)
? quart Corn Stock (see below recipe) or clear veggie stock
1 tablespoon butter
Salt & Ground White Pepper

Heat olive oil in sauce pot with onion and saute over high heat for 1 -- 2 minutes.
Add Corn and Saute for 1 minute
Lower heat to medium
Add milk and stock
Cook slowly until the corn and onion are tepid.
Remove from heat, allow soup to cool
In small batches puree the soup in a high speed blender till smooth and creamy
Taste and adjust with Salt and White Pepper
Reheat before adding to bowl with garnish

For Garnish:
Each bowl gets 3 shrimp cooked and cut in ?
1 piece of bacon cut into small pieces, cooked until just crispy
3 tablespoons of diced, blanched potatoes
Once soup is poured over garnish top with Chorizo Oil (See below recipe for Chorizo Oil)

Corn Stock:
Boil Corn on the Cob
Pinch of Saffron

Chorizo Oil:
Slowly render Chorizo, pour out oil through strainer and use to taste as the garnish.

Whakarewarewa near Rotorua is an inhabited Maori village and cultural center built around an impressive geothermal site. The residents use the geothermal pools and vents for bathing and cooking. Here they are cooking corn on the cob in this near-boiling, crystal-clear hot spring. We had some -- it was very good. I expected it to taste of the ubiquitous hydrogen sulfide, but it didn't pick up any off-flavor at all. They also use steam vents for steaming food: they have wooden covers constructed over the open vents, and they wrap meat/vegetables/etc in aluminum foil. The steam slow-cooks the food and keeps it nice and moist. Come back later & you've got dinner.
